The Soldier Rico becomes available as a playable character in Chapter 4. You are able to select Chapter 4 from the menu, and just run through the end of the game with Rico for this Trophy. Since difficulty does not effect this Trophy feel free to put it on Easy, especially if you got the harder difficulty Trophies on your first playthrough with Captain Templar.
