This covenant is located in Majula to the right of the entrance to the Tower of Heide. At the top of the hill is a large stone monument that you can kneel before. There will be multiple confirmations to join this covenant, so this trophy will not unlock until you reach the prompt, "Join the Covenant of Champions?", so don't worry about accidentally joining before you reach that.
