  The hobbies you need to get a gold in are:
  
  Triathlon
  Flight School
  Street Race
  Water Race
  Off-Road Race
  Shooting Range
  
  You only need to get one gold medal per hobby so you don't need to complete all street races or shooting range events to get this trophy. All of them are very easy so they shouldn't be an issue.

  You only need to get the gold once. Don't need to get a gold with all 3 characters.
