This Trophy is Missable

This Trophy isn't THAT hard to get, though there a a few prerequisites to unlock first and a few books that will making it easier to catch in general. It is definitely missable if you don't bother with the whole fishing sidequest though and obtain the bug catching net by answering YES to a question.

So let's start with the basics, you catch the Sea Guardian at the Shichiri Beach. You unlock the Beach if you do 3 long rides around Inaba AFTER 3 rides around Town on your scooter after school and on your days off.

In order to even Fish, you will need a Fishing Rod (duh) To start off, you might have noticed the little boy in the Shrine that always asks you for different Soda's and drinks in exchange for bugs, this happens in the first couple months in-game. Later on in the year, you'll notice the boy has lost his bug catching net and stops asking you for bugs. If you visit the Shrine at nighttime, you can meet a lady dressed in a white yukata. She'll then go on to say she found a net on top of the shrine and ask if it's yours. Answer YES to obtain the boys net. When you then revisit the Shrine and speak to the bug catching boy, he'll tell you his Dad bought him a new net so you can keep it.

Remember all those bugs you kept getting from the boy in exchange for Soda's? Well now at night time, you can visit the Shiroku Pub and talk the Lady behind the counter (providing you also have a jewel or a gem so you can speak to her in the first place) She'll give you a Fish Hook in exchange for one of the bugs, then your able to speak to the old man down by the riverbank and obtain the rod.

Next time you're free, take the rod down to the beach and choose to Fish. You'll notice it won't work in the beach's water. Go back to the Old man by the river and he will issue a challenge to catch the River Guardian (Not the SEA Guardian) To catch the River Guardian, you'll need Inaba Jewel Beetle as bait. You can catch them in the Shrine with the net or in Winter near your veggie patch outside your house. Once you have the required bait, you need to wait for a rainy/snowy day (It can only be caught on these days) and hop on down to the riverbank. Walk up to the pier and cast you rod in choosing the Inaba Beetle as bait. You will know straight away if it's hooked on the line as lot's of ripples and bubbles will be popping up around the rod (opposed to just a couple of tiny ones) If you don't get it hooked, reel the line in with O and try again (that way it won't waste bait and you can keep trying) Once it's on the line, toggle the left stick left and right trying to keep it in the middle of the screen holding down O, it shouldn't be too hard.

Once caught, bring the River Guardian back to the old man to receive your prize, the Deep Sea Rod. Now all you have to do is obtain the bait Genji Beetle which can be bought on the Sunday show, Tanaka's Amazing Commodities on August 22nd (8/22) OR caught like any other bug from the Shrine. Hop on back down the the Shichiri Beach and throw that line in! Same as before, if the water ripples and bubbles and popping up over the rod, you've got it hooked otherwise reel it back in and try again. The upside to catching this fish is it doesn't matter what the weather is, though raining improves the odds. The battle to reel in the Fish is a bit longer and harder too, but it shouldn't pose too much of a problem.

Once caught, the Trophy pops up while you inspect the big fish. Don't even need to go back to the old man!

Things to note, i made the whole fishing aspect easier by reading the following books which even gave me an extra ability to push the Triangle button while reeling in the fish to 'quick reel' it in faster.

Beginner Fishing - Increases the amount of times you can fish.
Expert Fishing - Boosts reeling in speed for faster catches.
