  You can do this on Level 5 of the Normandy, but in a main playthrough you can only upgrade to rank V. I recommend the Black Widow Sniper or the Suppressed Pistol you get in the Citadel DLC. When you beat the game, import your ME3 character and speedrun to the Citadel on casual, go to your upgrade bench, buy the additional 5 ranks and this should be your last trophy you need for the platinum.

  You can upgrade to level 6 in your first playthrough if you find a weapon in the field after buying it at the Citadel. I'm not sure with this a glitch or not. But I had the Chakram Launcher at level 6 before the end of my full insanity plauthrough.
