This is fairly simple. If you are playing on Casual (or any difficulty I guess) simply never heal yourself. If you die, you will always respawn at the last checkpoint with full health.
I personally played my entire Casual campaign while going for collectibles and never healed myself. I died twice and upon respawning at the checkpoint, I had full health.
