  Simply load up the map 'Cortex Castle' and near the end of the lap before the big jump you drive around a clocktower, instead of driving around you'll want to take the shortcut, I actually fluked it on my first go then realised it was a bit tricky to get and i'd only hit it 1/3 times and what I learned was that it's best come from a wide drift (boosting of course) and head towards the inside left-hand side and then trick jump to make the shortcut.

  In Cortex Castle near the end of the lap you will hit a big jump with speed pads before it. The castle tower it is in has a shortcut with a wooden platform that extends in the middle of the tower inside shortly before it when you enter the tower. There is a slight jump difficulty to this as you will need a boost and faster character to clear the gap. I did it with Tiny the Tiger.
  
  On the off chance you cannot do it just drive towards the speed pads, stop and drive backwards over the platform. It will still give you credit and the trophy.
