There are several types of enemies that will attempt to pilfer items off of you. For the sake of this trophy, you have to allow them (ha) to steal something from you, whether it's an item or money. Once they've taken it, slay them to reclaim your item and acquire the trophy. Otherwise, it might succeed the two checks it has to perform and flee, preventing you from retrieving it post-combat.
