I used the chapter 4 boss(4-5) as its quick to complete and you are rewarded with 57 coins after.
if you hit the snowman 6 times after each time it attacks you will skip the phase where he spends 10 seconds spinning around the arena making this much quicker. You do have to actually use the orange portal before you quit out or it wont save your coins.
