Start up the first level. Very close to the beginning when you come to the point where you have to rappel down (before going down) look to the right of the freeway and there will be several oryx standing about halfway up the sand dune. You don't have to headshot, one shot generally brings it down. Don't know if they can be found anywhere else, but this is very close to the beginning of the chapter and easy to do.
