You will struggle to do this on your own, if you do manage it, well done, however an experienced and competent human crew will be a big help here, use the Gaming Sessions feature of the site to find others.

You'll need to keep your shields down as you can't transport while either your ship's shields are up or the targets, the Kobayashi Maru's shields are gone by the time you arrive.

Note: If doing this with AI, be aware that selecting Crew-wide option "Engage Target" or Tactical Station "Attack Target" will cause Tactical AI to raise shields, as will going to Red Alert (which if using DualShock Controller you'll find the right-hand often resets to hovering above, and with Move Controllers if you're not precise can also accidentally hit).

First, check your objectives and travel to the Neutral Zone Border.

Once you've arrived, head towards the Kobayashi Maru, you'll want tactical to take out the Gravimetric Mines so they don't damage yourself on your approach to the Neutral Zone Border.

Diverting Power to engines (greater speed) and phasers (greater range) temporarily is advised, the hostiles appear to arrive at a set time. Once within 30km have tactical scan the ship and you'll see the number of life signs aboard, the ship starts with 485 aboard, you'll need to transport aboard at least 120, so when it gets down to 365 or less you will have rescued a sufficient amount, the trophy won't pop until after the simulation ends and you return to the Briefing Room.

Have your Helm keep within transporter range of the Kobayashi Maru and keep the hostiles in front of the ship so Tactical can target with weapons, between the Helm and Tactical they should disrupt the enemy vessel's weapons and shields (larger ships) using System Intrusion panel. You want to take out enemies as quickly as possible to keep their numbers down, and keep their weapons disabled so they do minimal damage to the Kobayashi Maru.

Your Engineer should concentrate on locking onto survivors and energising them aboard as quickly as possible and begin as soon as possible, while waiting for a lock-on they should also keep an eye on repairs, priorities are phasers and torpedoes (until they run out), warp core, don't worry about shields as you'll be avoiding using them.

Since the Engineer's focus should be on transporting, the Captain should keep the (Ship) Status screen visible and watch for warnings of system failures, and Tactical should alert to any malfunctions in the weapon systems.
