Prior to an event on the car select screen, before actually selecting a car, press Triangle to enter inspection mode.
In this mode, you will be able to look around and get in the car. The trophy is unlocked by looking at the front/back/inside and pressing Square when prompted on screen to change the viewing position.
You can simply keep looking at different angles of the same car again: just repeat this process 20 times to unlock the trophy.
