In the trackbuilder menu, select create your own track. You have to create a track in all 4 environments (Canyon, Valley, Lagoon and Stadium).
You can leave the mood random, but be sure to select anything other than the random track generator (the trophy doesn't pop with the random generator). I chose normal for all 4 of them (after trying it with the random track generator).
You can create a very short track (so just a start and a finish). Validate the track and afterwards quit the generator and choose a new environment. You should get the trophy after validating the 4th environment.
