On level 5-2, climb out into the open area. Near one of the walls, there will be a rocket launcher - grab this, and head down into the trench. Once the enemies start coming in, just run up right next to one and shoot them with a rocket point blank.
Note that this is easiest to do on easy difficulty and with Rico, since you'll be much less likely to die from the explosion.
