Parrying is done by pressing
before an attack hits you, the timing isn't that straight forward though. It's a little earlier than you'd think. This can be done as soon as you want seeing as you start with the parry ability. If its performed too early you will dodge out of the way.
I did it against the small dinosaurs after falling to ground level but wouldn't suggest it as they tend to swarm you, though they do minimal damage.
