  One of the easiest ways is too ram into the back of another car or as in the video let some other car ram you and flip your car over.

  As MoominEmu mentioned, he rammed a car to flip, however, in a 125cc kart race, if youre fast enough and you ram an opponent from behind, your car will 'climb' onto the rammed one. Continue to hold acceleration and trophy should pop soon after.
